The annual Great Taste Awards, organised by the Guild of Fine Food, are the recognised benchmark for speciality food excellence, the “Oscars” of the food world, a stamp of approval from 500 judges blind tasting in teams of three or four, judging products purely on taste, not on marketing. It is with great pride then that, yet again, Fudge Kitchen’s entries have hit the grade with another four of these prestigious awards to add to the 11 in their increasingly groaning trophy cabinet.

“It is a great honour to have been awarded four more Great Taste Awards,” said Fudge Kitchen MD, Sian Holt, “These are the ultimate differentiating rubber stamp for fine foods. Our products have always been about the
quality of the ingredients, texture and flavours and the authenticity of our production techniques, so to be judged on these alone and to be recognized for our efforts is particularly thrilling.”

So, a big hand to our 2017 winners …

Sugar-free Peanut Brittle and Sugar-free Sea Salted Caramels …
Sugar-free versions of two of Fudge Kitchen’s 10-strong range of ‘Delectables’ brittles and caramels, which already have two Great Taste Awards for the Almond Bark and original Peanut Brittle. The Delectables were developed in 2016 for the gifting, impulse and self-gifting markets and as an FK option for those inexplicable few that ‘don’t like fudge’. They have been an immediate hit.

Both 2017 winners use Zùsto®, a revolutionary sugar substitute sourced from Belgium. Its discovery came at the end of a year long search for a sugar substitute without aftertaste, with just the right sweetness and texture; that behaves like sugar, enabling FK’s prized, artisan production methods of hand stretching the brittle for just the right snap and hand rolling the caramel for extra creaminess.

The judges’ verdict on the brittle … “Good and crunchy, with a generous amount of peanuts and a good caramel and a hint of salt.”
And on the caramels … “Sugar free caramel with some good chewy and rich texture - bursts of sea salt keep coming - and then a little milky chocolate. As this is sugar free we applaud the flavour and texture”

Juniper and Kaffir Lime Dry Gin fudge …
One of the new Mixology Confection selection, which partners FK’s hand made, premium fudge with wines and spirits by artisanal producers with the same priorities of excellence and innovation. This champ combines Kent Dry Gin made by local Kentish micro-distillers, Anno (and their aptly named still, Patience), with botanicals of lime and infused juniper berries; hand decorated with lime chocolate.

The judges’ verdict … “A creamy fudge with a clear gin aroma and flavour. Quite extraordinary lime zestiness here, and bright juniper notes … ridiculously enjoyable.”

Stem Ginger Liquid Fudge …
Thick, creamy and endlessly versatile, the FK Liquid Fudge range of six sauces can be dolloped on puddings, poured over pancakes, spread on toast, mixed into batters, spread over sponges or simply spooned greedily in. A unique Fudge Kitchen product, it’s development started as a serendipitous accident when hand made FK whipping cream fudge was vacuum packed and imploded in an experiment at extending its shelf life. Hand working for an hour on a warm marble slab is the secret to the smooth, creaminess that the judges picked up on in our Stem Ginger version.

The judges’ verdict … “Unusual to have a runny fudge - the texture was inviting. This is an innovative product.”

• Zùsto® has four times less calories than granulated sugar (98kcal <> 400kcal per 100g), but with the same characteristics of taste and volume, making it ideal for diabetics, health conscious and weightwatchers. The magic ingredient is Zùsto, a 1-to-1 sugar substitute which includes all the technological functionalities of regular sugar. All about inclusivity …
While focusing on indistinguishably replicating the original’s flavour, texture and quality (we can confidently claim), developing the new Fudge Kitchen free-from range is also about inclusivity, about making sure that no one misses out on the undiluted FK experience; as MD Sian Holt explains. “It’s less to produce a product that doesn’t contain something - it’s not enough to be free-from - primarily it has to taste good and to make our premium products available to everyone, from diabetics to weightwatchers to food intolerants.”

Sugar-free Delectables …
The Fudge Kitchen nine-strong Delectables range of premium brittles and caramels was an immediate hit on launch in 2016, already notching up two Great Taste Awards for the Almond Bark and Peanut Brittle; and the perfect impulse gift or impromptu self gift.

To then decide to launch a sugar-free version of these two winners was verging on hubris. To then produce sugar free counterparts indistinguishable from these originals was verging on genius! And
indistinguishable they clearly are, as blind taste tests thrown out to customers and food press
in Spring 2017 proved, with a neat 50:50 split result on which was which.

Ever the perfectionist pioneers, FK’s hunt for a sugar substitute without aftertaste, with just the right sweetness and texture was a global one. Dairy-free vegan slab fudge …
Fudge Kitchen was built on fresh whipping cream ‘slab fudge’. Made by hand in our seven UK wide shops for over 35 years, using a core recipe dating back to the 1830s and all natural ingredients. We use the traditional method – boiling up the fudge in huge copper pots, before pouring it onto an Italian marble counter, where it is ‘slabbed and loafed’ as it cools, an authentic technique using outsized spatulas to turn the solidifying fudge as it cools, breaking up any granulation and ensuring our world famous creamy texture and soft centre. In this way, it is shaped into a long ‘baguette’ before being sliced into generous 175g slices. Available in a kaleidoscope of over 20 innovative flavours – from Sea Salted Caramel to Strawberries and Cream and freezable up to 6 months … but rarely put to that test!

Our dairy-free range (below) is made in exactly the same way, with only natural ingredients, but with the whipping cream substituted for either soya cream or coconut cream. Again, we’re confident that it is indistinguishable from the dairy original. In 1995, the company was bought by MD Sian Holt, who, over the course of 18 years, expanded the Fudge Kitchen retail side into eight thriving shops in Bath, York, Cambridge, Canterbury, Windsor, Edinburgh, Birmingham Selfridges and Oxford; before steering the brand into a new, exciting wholesale phase of its life, with the development in 2012 of the Devilishly Different Gourmet Butter Fudge range. Still using the finest, natural ingredients, handmade and hand decorated by an artisan staff in their new dedicated production facility in Aylesham, Kent, but now with an extended shelf life of six months. The company now exports to 20 countries from France to the Falkland Islands and has recently also moved into the food service, corporate and hospitality sectors.

• The 60 strong range of Gourmet Butter products include Drinking Fudge, Fudge Sauces, Gift Hampers, Dipped Sticks, miniatures and Slim Sliders; and a menu of some 40 flavours. All are available online at www.fudgekitchen.co.uk and selected lines are available through over 200 stockists nationwide including Selfridges, Harrods, Waitrose, Booths, Lakeland, Fenwicks, Adnams, Hilton T5 Heathrow and independent speciality stores across the UK. Fudge Kitchen are also proud to supply some of the UK’s most luxurious hotels and Wembley Stadium events; and to make own label fudge products for Selfridges and Whittard’s of Chelsea, amongst others.

• Fudge Kitchen supply their products direct, but also export through distributors Bommels in Holland, Grand Cru in Germany and Piccadilly Purveyors of Fine Food in New Zealand.

• The boasty bit: Fudge Kitchen are proud to have received seven Great Taste Awards in 2010, 2011, 2013 and 2015 for their Rich Chocolate & Orange Fudge, Peanut Butter Fudge, Butterscotch Fudge Sauce, Sticky Toffee Pudding Gourmet Fudge, Hazelnut Heaven Gourmet Fudge, Sea Salted Caramel Fudge and Peanut Brittle. They were named Ambient Manufacturing Company of the Year at the 2014/15 industry Oscars, the Food Manufacturing Excellence Awards and their slice and serve fudge loaves were finalists in The Caterer Product Excellence Awards 2015. MD Sian Holt was awarded a Special Award for Leadership and Vision by Produced in Kent and was listed in the Kent Business Power List of 40 most influential business leaders in Kent.
