MaisonLe Paulmier is a small chateau nestled in the Pays d’Auge, in the heart of Normandy.
Maison LE PAULMIER uses the technique of acetification in barrel, with a low acetic yield, to give a rounded and perfumed cider vinegar.
Inspired by a forgotten recipe, made in cauldrons by slow heating from a must fresh from the press, Maison Le Paulmier has created two lines of condiments
La Pommée: Apple or Pear. Delicate, low-acidity and balanced between sweet and sour flavours.
L’Acidulée: Apple, Pear or Elderflower. Prepared and aged in barrels, distinguished by their acidity and their pleasant aroma.
La Pommée vinegars are ideal for deglazing (fresh foie gras, scallops, giblets), reductions & over cooked vegetables.
L’Acidulée is a perfect for creative salads and with crudités with bitter flavours, such as rocket and endive.
Restaurants such as Pavillion Ledoyen, La Réserve**, Astrance***, Auberge du Jeu de Paume** were immediately impressed by the quality of Le Paulmier products and have adopted them.
