Bruce is an experienced chef consultant who provides expertise to the food, catering and hospitality industry, from restaurants and hotels to corporates, venues and events to producers and suppliers, through his company BAW Consulting. He specialises in advising on new venue/restaurant launches, brand re-vamps and turning around poorly performing sites, as well as on-going management.
His 18-year career in the industry has seen him taking on many varied, high-profile roles, including: Head Chef positions at the Tate Modern and Paternoster Chop House; opening, developing and managing operations at a range of restaurants such as the National Portrait Gallery and Royal Academy and major corporate hospitality sites such as Sony Europe, Pepsi Co; pitching for, and overseeing large-scale venue and event catering contracts, such as Royal Ascot, BBC Music Awards, ILM Star Wars launch party, Live Nations Festivals, and bespoke events at Olympics sites and building a branded hotel/restaurant concept. Early in his career, he honed his skills in the Michelin-starred Greenhouse under Head Chef Paul Merritt.
