BRUNO
Bruno is the flagship cheese of HQF Agricola network: an Italian short supply chain dairy production. The Bruna Alpina cow has been raised in Italy for 150 years on the slopes of Stura Valley. Its forage is controlled and certified and the quality of milk is subject to regular analysis.
HQF Agricola has selected 100 cows which are farmed respecting the animal welfare. The farm is a closed circuit production. The cheese is made on a daily basis in copper tanks at a 55 °C temperature; the cheese texture is grainy, the taste is strong and firm. It is 16 months aged on fir wood boards. It is made with 100% Italian certified milk.
