Type 00 is the finest grade of flour we mill, and for this organic version we use the best organic hard wheats. In keeping with tradition, only the innermost fraction of the whole wheat berry can be used to create this grade of flour, giving it a bright, white colour and a low ash content. Its properties are well suited to bubbly pizza crusts and silky pasta doughs.
